PROSCUITTO
WRAPPED BLACK DRUM

24 oz black
drum- remove skin and cut into 6 oz. Pieces ..............................more

8-12 large pieces of thinly sliced proscuitto
Lightly season fish and wrap proscuitto around the fish
Lightly sear fish in a hot fry pan then place in a 400-degree oven
until cooked through Take out and let rest
SALAD
4 bunch of watercress trimmed and very
well washed and pat dry
Segments of 2 oranges 2 limes and 2 lemons
1 red onion julienne
1 seedless and skinless tomato chopped
Olive oil
Add
all ingredients into mixing bowl and gently toss with olive oil
and season to taste
POMMERY-MANGO
EMMULSION
4 tbs. Pommery
mustard
1 ripe mango skin and pit removed and chopped
Olive oil
In food processor
add mango and mustard. Puree until smooth
While machine is running slowly add olive oil until a shiny froth
like mixture forms
PRESENTATION
& GARNISH
Place mango oil on bottom of plate.
Place salad near the side of plate and rest fish partly on sauce
and on salad.
